So, after talking to my wonderful mother in law who happens to be a financial guru we realized that we would be spending less money if we bought a place outside of the island.

But nobody tells you how hard this is! So all this venting to get to the point that I was in some serious need of some comfort food! But I had a decent version at a fancy restaurant once and realized that when it is made with some good quality cheese it can be pretty amazing! But then I thought: what the heck?!? I might as well make the Mac and cheese, eat a yummy bowl and use the cold leftovers to make the fried balls!

It was the perfect solution, since I was planning to post some delicious bruschetta this weekend but my husband ate them before I could shoot them!!! Can I blame him? They were out of this world good. Oh well… More reasons to make it again! Yeah, right…. Grate the cheeses and set aside. Bring a large pot of salted water to the boil, add the pasta then follow package directions, but cook 2 minute less than the recommended cook time. Drain then rinse pasta with cold water and set aside. Add milk to a large microwave-safe measuring jug and microwave 1 to 3 minutes until warm. Alternatively, you can add milk to a large saucepan over medium heat then heat milk until warm.

While the milk warms up, melt the butter in a large saucepan or Dutch oven over medium heat. When the butter begins to bubble, add the flour. Cook, constantly whisking until the butter smells fragrant and nutty — the color of the butter-flour mixture will be light brown; 2 to 3 minutes. While whisking, slowly pour the warm milk into butter and flour mixture. Continue to cook, constantly whisking until the sauce bubbles and thickens.

COOKING WITH KRISTEN! (White Cheddar & Truffle Mac N' Cheese)

Remove the pan from the heat. Stir until the heat from the sauce melts the cheese. If the drained and rinsed pasta will fit into the pan, add it to the cheese sauce. If the pasta will not fit, add both the pasta and sauce to a separate large bowl and stir well.

Baked Mac and Cheese

For a stovetop mac and cheese, cover with a lid and set aside for 5 minutes. In this time the pasta will absorb some of the extra cheese sauce. For a baked mac and cheese, pour the pasta into the prepared baking dish. Bake, uncovered, until bubbling, about 30 minutes.

For browned cheese on top, turn the oven to broil, and then broil 3 to 5 minutes until the top has blistered and lightly browned. Let stand about 10 minutes before serving. Let it cool completely on a rack before freezing, and then wrap it very well with foil we use two layers.

White Cheddar Mac and Cheese | The Ultimate Comfort Food

I used to work in the Shred Room of our local dairy. When they shred the cheese, there is an anti clumping powder added to the tumbler before packaging. This may be the reason the preshredded cheese does not work so well in the recipes. I tried this tonight and my son loves it!!

We opted to bake half and do the stovetop method for the other half to compare. We are a gluten free family due to wheat allergies of multiple members. It was easy to adapt. Use corn starch in place of flour. Use your favorite GF pasta. I live Barilla. I also used 4 C. Thank you for a new family favorite!! Reply Virginia Ballensky June 17, , am Cooking made easy!
